Instructions:
- Preheat your oven to 375°F (190°C). Line a loaf pan or baking dish with parchment paper for easy cleanup.
- In a large mixing bowl, combine the ground beef, breadcrumbs, diced onion, half of the cooked bacon, cheddar cheese, ketchup, mustard, eggs, garlic powder, salt, and pepper. Mix just until combined—avoid overmixing to keep the meatloaf tender.
- Shape the mixture into a loaf and place it in the prepared pan.
- Bake for 45–50 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and spread the top with a generous layer of BBQ sauce. Sprinkle on the extra cheddar cheese and remaining bacon pieces.
- Return to the oven for another 5–7 minutes, or until the cheese is melted and bubbling.
- Let the meatloaf rest for at least 5 minutes before slicing. Serve warm with your favorite sides.
