Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper for easier cleanup.
- In a small bowl, mix together ranch seasoning, garlic powder, and black pepper.
- Rub each chicken breast with olive oil and then coat evenly with the ranch seasoning blend.
- Wrap each piece of chicken with 2 slices of bacon, ensuring the ends are tucked underneath.
- Place the wrapped chicken in the baking dish, seam-side down to keep the bacon secure.
- Bake uncovered for 35–40 minutes, or until the internal temperature of the chicken reaches 165°F and the bacon is crispy.
- For added crispness, broil on high for 2–3 minutes—watch closely to prevent burning.
- Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Variations:
- Spicy twist: Add a pinch of cayenne or drizzle buffalo sauce over the finished chicken.
- Cheesy version: Add a slice of pepper jack or mozzarella underneath the bacon before wrapping.
- Low-carb option: Serve with cauliflower mash or roasted green beans for a keto-friendly meal.
Tips:
- Use a meat thermometer to avoid overcooking and ensure juicy, perfectly done chicken.
- For maximum bacon crispiness, place the chicken on a wire rack over the baking dish so fat can drain off as it cooks.
