Bang Bang Chicken Skewers

Instructions:

  1. Marinate the Chicken:
    In a large bowl, combine olive oil, lime juice, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss until evenly coated. Let sit for 10–15 minutes.
  2. Prepare the Sauce:
    In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar. Adjust the spiciness to your liking and set aside.
  3. Assemble the Skewers:
    Thread the marinated chicken chunks onto the prepared skewers.
  4. Grill the Chicken:
    Preheat a grill or grill pan to medium-high heat. Cook the skewers for 5–7 minutes per side, or until the chicken is cooked through and has a nice char.
  5. Sauce and Serve:
    Transfer the skewers to a serving platter and generously drizzle with the bang bang sauce.
  6. Garnish:
    Sprinkle with fresh chopped cilantro and serve immediately.
