Bangers and Mash Casserole

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. In a skillet over medium heat, cook the sausages until browned and fully cooked, turning occasionally. Once done, slice them into thick rounds and set aside.
  3. In the same skillet, melt butter and sauté the sliced onions over medium heat for 8–10 minutes, or until soft and deeply golden.
  4. Sprinkle flour over the onions and stir well to coat. Cook for 1 minute to form a roux.
  5. Gradually whisk in the beef broth and Worcestershire sauce. Bring to a simmer and cook for 5–7 minutes until the gravy thickens. Stir in thyme (if using), and season to taste with salt and black pepper.
  6. Spread the mashed potatoes evenly in the prepared baking dish.
  7. Arrange the sausage slices evenly over the mashed potatoes.
  8. Pour the onion gravy over the sausage and potatoes. If using, sprinkle cheddar cheese over the top.
  9. Bake uncovered for 20 minutes until bubbling and lightly golden on top.
  10. Let the casserole cool for a few minutes before serving.
