Instructions:
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook ramen noodles according to package directions (without seasoning). Drain and set aside.
- In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Stir in garlic powder, smoked paprika, BBQ sauce, and soup. Add milk and sour cream, mixing until creamy.
- Combine noodles, beef mixture, half the bacon, and 1 cup cheddar cheese. Stir until well coated.
- Pour into prepared baking dish. Top with mozzarella, remaining cheddar, and bacon.
- Bake uncovered for 20–25 minutes, until bubbly and golden.
- Sprinkle with crispy fried onions (if using) just before serving.
Variations
- Tex-Mex twist: Add diced jalapeños or a can of green chilies to the beef mixture.
- Spicy version: Swap the BBQ sauce for a spicy chipotle or add hot sauce for extra heat.
- Veggie-packed: Mix in corn, bell peppers, or mushrooms for added flavor and nutrition.
- Cheese lovers’ upgrade: Use a mix of smoked gouda, pepper jack, or Monterey Jack for a different flavor profile.
Tips
- To save time, cook the bacon ahead of time and crumble it right before use.
- For stronger smoky flavor, use smoked cheddar or add a dash of liquid smoke to the beef mixture.
- Let the casserole rest for 5 minutes before serving to allow the cheese to set slightly.
- Leftovers reheat beautifully in the oven or microwave—making it a great meal prep option.
