Instructions:
- In a small bowl, mix cream cheese, honey (or maple syrup), and vanilla until smooth.
- Spread the cream cheese mixture evenly over one tortilla.
- Sprinkle blueberries evenly across, then top with shredded cheese.
- Place the second tortilla on top and gently press down.
- In a skillet, melt butter over medium heat. Add the quesadilla and cook 2–3 minutes per side, until golden brown and the cheese melts.
- Slice into wedges and dust with powdered sugar, if desired.
