Blueberry Breakfast Quesadilla

Instructions:

  1. In a small bowl, mix cream cheese, honey (or maple syrup), and vanilla until smooth.
  2. Spread the cream cheese mixture evenly over one tortilla.
  3. Sprinkle blueberries evenly across, then top with shredded cheese.
  4. Place the second tortilla on top and gently press down.
  5. In a skillet, melt butter over medium heat. Add the quesadilla and cook 2–3 minutes per side, until golden brown and the cheese melts.
  6. Slice into wedges and dust with powdered sugar, if desired.
