Breakfast Grilled Cheese with Eggs

Instructions:

  1. In a bowl, whisk together eggs, milk, salt, and pepper. Heat 1 tablespoon butter in a skillet over medium heat. Pour in eggs and cook gently, stirring until just set. Set aside.
  2. If not pre-cooked, cook sausage in the skillet until browned and fully done. Slice into small pieces.
  3. Lay out the bread slices. On two of them, evenly layer scrambled eggs, sausage pieces, cheddar, and mozzarella.
  4. Top with remaining bread slices. Butter the outer sides of each sandwich.
  5. Heat a skillet over medium-low. Grill sandwiches for 3–4 minutes on each side, pressing lightly with a spatula, until bread is golden and cheese is melted.
  6. Slice and serve hot.
