Brown Sugar & Chili Bacon Jerky

Instructions:

  1. Preheat Air Fryer:
    Set your air fryer to 300°F (150°C). Line the basket with parchment paper or a nonstick tray for easy cleanup.
  2. Prepare the Bacon:
    Mix brown sugar, chili powder, black pepper, and cayenne (if using) in a small bowl.
    Press both sides of each bacon slice into the seasoning mixture until fully coated.
  3. Air Fry:
    Lay bacon in a single layer in the air fryer basket, avoiding overlap.
    Cook for 10–12 minutes, flip, then cook another 8–10 minutes until bacon is glossy and beginning to firm. Cook in batches if necessary.
  4. Cool and Set:
    Transfer bacon to a wire rack. Let cool completely—bacon will firm up and develop a chewy, jerky-like texture.
  5. Serve or Store:
    Enjoy immediately or store in an airtight container at room temperature for up to 2 days. Refrigerate for longer storage.

Variations:

  • Maple twist: Replace some brown sugar with maple syrup for a richer, deeper sweetness.
  • Smoky heat: Use smoked paprika in place of chili powder for a different kind of heat.
  • Savory version: Reduce the sugar and add a light soy glaze for an umami-focused jerky.

  • Blotting the bacon gently with paper towels after air frying removes excess grease and helps the glaze set cleanly.
