Instructions:
- In a small bowl, mix together mayonnaise, chipotle sauce (or adobo), and lime juice until smooth. Set aside.
- Cook the bacon in a skillet over medium heat until crisp, then transfer to a paper towel-lined plate.
- In the same skillet, melt butter or add oil. Cook eggs to your preference—fried, over-easy, or scrambled. Season with salt and pepper.
- Toast the bagels or buns until golden brown.
- Spread chipotle mayo generously on both halves of each toasted bun.
- Begin layering: on each bottom half, place lettuce or sprouts, followed by tomato slices, avocado, the cooked egg, 2 slices of bacon, and a slice of pepper jack cheese.
- Cap with the top half of the bun and serve immediately while warm.

- Use turkey bacon or tempeh for a lighter or vegetarian version.
- Swap out pepper jack for Monterey Jack or cheddar based on your spice preference.
- Add a fried green tomato for an extra Southern California twist.
