California Breakfast Sandwich

Instructions:

  1. In a small bowl, mix together mayonnaise, chipotle sauce (or adobo), and lime juice until smooth. Set aside.
  2. Cook the bacon in a skillet over medium heat until crisp, then transfer to a paper towel-lined plate.
  3. In the same skillet, melt butter or add oil. Cook eggs to your preference—fried, over-easy, or scrambled. Season with salt and pepper.
  4. Toast the bagels or buns until golden brown.
  5. Spread chipotle mayo generously on both halves of each toasted bun.
  6. Begin layering: on each bottom half, place lettuce or sprouts, followed by tomato slices, avocado, the cooked egg, 2 slices of bacon, and a slice of pepper jack cheese.
  7. Cap with the top half of the bun and serve immediately while warm.
