Cheddar BBQ Bacon Bombs

Instructions:

  1. Preheat oven:
    Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for even cooking and crisping.
  2. Prepare meat mixture:
    In a large bowl, mix the ground beef with salt, pepper, garlic powder, and onion powder. Combine just until the seasonings are evenly distributed—do not overmix.
  3. Assemble the bombs:
    Scoop about a tablespoon of the meat mixture and flatten it in your hand. Place a cube of cheddar in the center and wrap the meat around it, sealing completely to form a tight meatball.
  4. Wrap with bacon:
    Wrap each meatball with a half slice of bacon, placing the seam side down on the wire rack. No need for toothpicks if the seam is well tucked.
  5. Bake:
    Bake in the preheated oven for 20 minutes. Remove from the oven and brush each bomb generously with BBQ sauce. Return to the oven and bake for another 10 minutes, or until the bacon is crisp and the sauce is caramelized.
  6. Serve:
    Let rest for 5 minutes to allow the cheese to settle slightly. Serve warm with extra BBQ sauce on the side if desired.

Variations:

  • Add chopped jalapeños or crushed red pepper flakes for a spicy version.
  • Mix shredded cheddar into the meat for double the cheesy goodness.
  • Use pepper jack instead of cheddar for extra kick.
  • Try turkey bacon for a lighter twist or smoked bacon for extra flavor depth.

Tips:

  • Keep the cheese cubes small and well-sealed in the meat to avoid leaking.
  • Use a wire rack over a foil-lined baking sheet for easy cleanup and crispier bacon.
  • Brushing BBQ sauce near the end of baking prevents burning and enhances stickiness.
  • For even more texture, finish under the broiler for 1–2 minutes. Keep an eye on them!
