Cheesy Ranch Potatoes and Smoked Sausage

Instructions:

  1. Preheat the oven to 400°F (205°C). Lightly grease a large baking dish or sheet pan.
  2. Add the potatoes to the prepared dish. Drizzle with olive oil and sprinkle with ranch seasoning, garlic powder, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the potatoes into an even layer and bake for 20 minutes, until they begin to soften.
  4. Remove the dish from the oven, add the sliced smoked sausage, and stir to combine.
  5. Return to the oven and bake for another 15 to 20 minutes, until the potatoes are golden and the sausage is lightly browned.
  6. Sprinkle the cheddar and mozzarella evenly over the top and return to the oven for about 5 minutes, just until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with parsley or green onions if desired. Serve hot.

Variations

  • Use spicy smoked sausage or andouille for extra heat.
  • Swap cheddar for pepper jack or a Mexican cheese blend for a different flavor profile.
  • Add sliced bell peppers or onions during the second bake for extra color and texture.
  • Make it lighter by using turkey smoked sausage and reduced-fat cheese.

Tips

  • Cut the potatoes into evenly sized pieces to ensure they cook at the same rate.
  • For extra crispiness, spread the potatoes in a single layer without overcrowding the pan.
  • Line the baking dish with parchment paper for easier cleanup.
  • Leftovers store well in the refrigerator for up to three days and reheat beautifully in the oven or air fryer.
