Instructions:
- Preheat the oven to 400°F (205°C). Lightly grease a large baking dish or sheet pan.
- Add the potatoes to the prepared dish. Drizzle with olive oil and sprinkle with ranch seasoning, garlic powder, and black pepper. Toss until the potatoes are evenly coated.
- Spread the potatoes into an even layer and bake for 20 minutes, until they begin to soften.
- Remove the dish from the oven, add the sliced smoked sausage, and stir to combine.
- Return to the oven and bake for another 15 to 20 minutes, until the potatoes are golden and the sausage is lightly browned.
- Sprinkle the cheddar and mozzarella evenly over the top and return to the oven for about 5 minutes, just until the cheese is melted and bubbly.
- Remove from the oven and garnish with parsley or green onions if desired. Serve hot.
