Cheesy Seafood Mac & Cheese

Instructions:

  1. Cook Pasta:
Boil the macaroni in salted water until al dente. Drain and set aside.
  2. Prepare Seafood:
In a skillet, melt 1 tablespoon butter over medium heat. Sauté the shrimp for 2–3 minutes per side, just until pink. Add crab and lobster, stirring to heat through for 1–2 minutes. Remove from heat.
  3. Make Cheese Sauce:
In a saucepan, melt the remaining tablespoon of butter. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cream, stirring until thickened—about 5 minutes.
  4. Add Cheese and Seasoning:
Stir in cheddar, mozzarella, and Parmesan until melted. Season with garlic powder, Old Bay, salt, and pepper.
  5. Combine and Bake:
Preheat oven to 375°F (190°C). In a large mixing bowl, combine the macaroni and cheese sauce. Gently fold in the seafood. Transfer to a greased baking dish and top with extra cheese if desired.
  6. Bake:
Bake for 15–20 minutes, or until bubbly and golden on top.
  7. Garnish and Serve:
Sprinkle with chopped parsley and serve hot.

Variations:

  • Swap shrimp or lobster for scallops or cooked salmon chunks.
  • Add a touch of Dijon mustard or hot sauce to the cheese sauce for complexity.
  • Stir in sautéed spinach or roasted red peppers for a veggie boost.

Tips:

  • For a crispy topping, mix ½ cup breadcrumbs with 1 tablespoon melted butter and sprinkle over before baking.
  • Don’t overcook the seafood—let the oven finish them off gently.
  • Use freshly grated cheese for the smoothest sauce—it melts better than pre-shredded.
