Instructions:
- In a medium mixing bowl, combine the powdered sugar, softened butter, corn syrup, vanilla, and almond extract.
- Stir until a soft dough forms. You may use your hands if needed to bring the dough together until smooth and pliable.
- Line a baking sheet with parchment paper for easy cleanup.
- Scoop about 2 teaspoons of dough, roll it into a ball, and flatten it into a small disc.
- Place a cherry in the center and gently wrap the dough around it, smoothing to form a round shape. Repeat with remaining cherries.
- In a microwave-safe bowl, melt the chocolate almond bark in 30-second intervals, stirring in between until fully smooth.
- Holding each cherry by the stem, dip it completely into the melted chocolate, allowing the excess to drip off.
- Place each dipped cherry onto the parchment-lined baking sheet. Repeat with all cherries.
- If desired, drizzle extra melted chocolate over the tops for decoration.
- Let the cherries rest at room temperature for about 1 hour, or until the chocolate is completely firm.
- Store in an airtight container at room temperature for up to 5 days.
Variations :
- Festive drizzle: Drizzle melted white chocolate over the top for a contrast in color and flavor.
- Decorative sprinkles: Add holiday-themed sprinkles or edible glitter while the chocolate is still wet.
- Flavor twist: Use cherry, orange, or rum extract in place of almond for a different aroma.
- Boozy option: Soak the cherries in liqueur (like amaretto or brandy) for 24 hours, then dry well before wrapping.
Tips :
- Make sure the cherries are thoroughly dried before wrapping to prevent the dough from slipping.
- If the dough becomes too soft to handle, chill it for 10–15 minutes to firm up.
- Don’t refrigerate the dipped cherries unless necessary, as condensation can affect the chocolate finish.
- For a smoother chocolate shell, tap off excess chocolate after dipping and allow to set on parchment without moving.
