Cinnamon Sugar Funnel Cake Bites

Instructions:

  1. Make the batter:
In a large bowl, whisk together the milk, egg, and vanilla. Stir in the flour, salt, baking soda, granulated sugar, and melted butter until a smooth, thick batter forms.
  2. Heat the oil:
Pour about 2 inches of vegetable oil into a deep, heavy-bottomed pot. Heat to 350°F (175°C), using a thermometer for accuracy.
  3. Fry the bites:
Drop tablespoon-sized scoops of batter into the hot oil. Fry in batches for about 2 minutes per side, or until golden brown and crisp. Avoid overcrowding the pot.
  4. Drain and coat:
Remove bites with a slotted spoon and drain on paper towels. While still warm, toss generously in the cinnamon sugar mixture.
  5. Optional glaze:
In a small bowl, whisk together cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over the warm bites before serving, if desired.

Variations:

  • Add a pinch of nutmeg or pumpkin spice to the cinnamon sugar for seasonal flair.
  • Substitute almond or coconut extract for a flavor twist in the batter.
  • Serve with a fruit compote or chocolate sauce instead of glaze.

Tips:

  • Chill the batter for 10–15 minutes before frying for a crispier texture.
  • Use a cookie scoop for evenly sized bites.
  • Enjoy immediately after coating—these are best served fresh while warm.
