Instructions:
- Make the batter:
In a large bowl, whisk together the milk, egg, and vanilla. Stir in the flour, salt, baking soda, granulated sugar, and melted butter until a smooth, thick batter forms.
- Heat the oil:
Pour about 2 inches of vegetable oil into a deep, heavy-bottomed pot. Heat to 350°F (175°C), using a thermometer for accuracy.
- Fry the bites:
Drop tablespoon-sized scoops of batter into the hot oil. Fry in batches for about 2 minutes per side, or until golden brown and crisp. Avoid overcrowding the pot.
- Drain and coat:
Remove bites with a slotted spoon and drain on paper towels. While still warm, toss generously in the cinnamon sugar mixture.
- Optional glaze:
In a small bowl, whisk together cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over the warm bites before serving, if desired.
Variations:
- Add a pinch of nutmeg or pumpkin spice to the cinnamon sugar for seasonal flair.
- Substitute almond or coconut extract for a flavor twist in the batter.
- Serve with a fruit compote or chocolate sauce instead of glaze.
