Corn & Black Bean Salsa

Instructions:

  1. In a large mixing bowl, combine the cooked black beans, cooked corn, diced tomatoes, red bell pepper, red onion, jalapeños, and chopped cilantro.
  2. In a separate small bowl, whisk together the fresh lime juice, apple cider vinegar, kosher salt, ground cumin, and black pepper until well combined.
  3. Pour the dressing over the vegetable mixture and gently toss until all the ingredients are evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
