Crispy Nacho Egg Rolls

Instructions:

  1. In a skillet over medium heat, heat olive oil and add the ground meat. Cook until browned and fully cooked through. Drain any excess fat.
  2. Stir in taco seasoning and water. Simmer for 2–3 minutes, allowing the mixture to thicken slightly.
  3. Remove from heat. Add black beans, corn, shredded cheese, and chopped jalapeños if using. Stir to combine and let cool slightly.
  4. On a clean surface, lay out one egg roll wrapper with a corner pointing toward you. Spoon about 2 tablespoons of filling near the center.
  5. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose. Seal the edge with a bit of water. Repeat for all wrappers.
  6. To fry: Heat oil to 350°F (175°C) in a deep pan. Fry egg rolls in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
    To bake: Preheat oven to 400°F (200°C). Arrange rolls on a greased baking sheet, lightly spray or brush with oil, and bake for 15–18 minutes, flipping halfway through, until golden brown and crisp.
  7. Serve warm with sour cream, salsa, or queso for dipping.
