Crispy Rice & Onion Patties

Instructions:

  1. In a mixing bowl, combine the cold rice, chopped onion, egg, flour, garlic powder, salt, pepper, and parsley (if using). Mix until the ingredients are well blended and the mixture holds together when pressed.
  2. Shape the mixture into 8–10 small patties, about 2½ inches wide and ½ inch thick. If the mixture feels too wet, add a little more flour.
  3. Heat 2–3 tablespoons of oil in a large skillet over medium heat.
  4. Fry the patties in batches, cooking each for about 3–4 minutes per side until golden brown and crispy. Avoid overcrowding the pan.
  5. Transfer cooked patties to a paper towel-lined plate to drain excess oil.
  6. Serve warm, as-is or with sour cream, hot sauce, or your favorite dipping sauce.

Variations :

  • Cheesy Rice Patties: Add ½ cup shredded cheddar or mozzarella to the mix.
  • Vegetable Boost: Stir in finely chopped cooked spinach, bell peppers, or grated carrot.
  • Spicy Version: Add a pinch of cayenne or chopped jalapeño for heat.
  • Herbed Patties: Replace parsley with fresh dill, basil, or cilantro for extra aroma.

Tips :

  • Use cold rice for the best texture and easy shaping. Fresh hot rice may fall apart.
  • Finely chop onions to avoid large raw bites and help the mixture bind better.
  • Don’t rush frying—a steady medium heat ensures a crisp crust without burning.
  • Double the batch and freeze extras—reheat in a toaster oven or air fryer.
