Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine broccoli, cream soup, sour cream, 1 cup cheddar cheese, garlic powder, onion powder, and black pepper. Mix well.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, toss the crushed crackers with melted butter. Sprinkle evenly over the casserole.
- Top with the remaining ½ cup cheddar cheese.
- Bake uncovered for 25–30 minutes, until bubbly and golden brown on top.
- Let cool slightly before serving.
Variations
- Hearty meal version: Add cooked rice or diced chicken to make it a one-dish dinner.
- Veggie twist: Mix in sautéed mushrooms, onions, or bell peppers for extra color and flavor.
- Cheese lover’s upgrade: Use a blend of sharp cheddar and Monterey Jack for extra creaminess.
- Cracker alternative: Replace Ritz crackers with crushed cornflakes or panko for a crunchier topping.
Tips
- Steam the broccoli just until tender — not mushy — to keep a bit of bite and texture.
- For extra golden topping, broil the casserole for the last 1–2 minutes of baking.
- Prepare the casserole a day ahead, cover, and refrigerate. Bake when ready to serve.
- This dish pairs beautifully with roasted chicken, baked ham, or even a simple green salad for balance.
