Instructions:
- In a skillet over medium heat, heat olive oil. Add zucchini slices, season with salt and pepper, and sauté for 3–4 minutes until just tender. Remove from heat.
- In a small bowl, mix butter and minced garlic. Spread garlic butter evenly on one side of each bread slice.
- Heat a large skillet or griddle over medium heat. Place 2 slices of bread, butter-side down, in the skillet.
- Top each slice with half the mozzarella and cheddar cheese, followed by sautéed zucchini, then the remaining cheese.
- Place the other bread slices on top, butter-side up. Cook for 3–4 minutes per side until the bread is golden brown and the cheese is fully melted.
- Slice in half and serve hot.
Variations :
- Use provolone or fontina for a different cheesy flavor profile.
- Add thinly sliced tomatoes or roasted red peppers for extra freshness.
- Spread a thin layer of pesto on the inside before adding cheese for a basil-garlic punch.
Tips :
- Cook on medium heat to ensure the bread gets crispy without burning before the cheese melts.
- Press gently with a spatula while cooking to help the cheese melt evenly.
- Pat the zucchini slices dry before cooking to avoid excess moisture in the sandwich.
