Garlic Butter Zucchini Grilled Cheese

Instructions:

  1. In a skillet over medium heat, heat olive oil. Add zucchini slices, season with salt and pepper, and sauté for 3–4 minutes until just tender. Remove from heat.
  2. In a small bowl, mix butter and minced garlic. Spread garlic butter evenly on one side of each bread slice.
  3. Heat a large skillet or griddle over medium heat. Place 2 slices of bread, butter-side down, in the skillet.
  4. Top each slice with half the mozzarella and cheddar cheese, followed by sautéed zucchini, then the remaining cheese.
  5. Place the other bread slices on top, butter-side up. Cook for 3–4 minutes per side until the bread is golden brown and the cheese is fully melted.
  6. Slice in half and serve hot.

Variations :

  • Use provolone or fontina for a different cheesy flavor profile.
  • Add thinly sliced tomatoes or roasted red peppers for extra freshness.
  • Spread a thin layer of pesto on the inside before adding cheese for a basil-garlic punch.

Tips :

  • Cook on medium heat to ensure the bread gets crispy without burning before the cheese melts.
  • Press gently with a spatula while cooking to help the cheese melt evenly.
  • Pat the zucchini slices dry before cooking to avoid excess moisture in the sandwich.
