Garlic Mozzarella Chicken Bomb Skewers

Instructions:

  1. Preheat oven to 400°F (200°C) or heat grill to medium-high.
  2. Cut chicken into large bite-sized chunks and flatten slightly.
  3. In a small bowl, mix together the mozzarella, garlic, and parsley.
  4. Place a spoonful of cheese mixture on each piece of chicken and wrap tightly with a strip of bacon. Use a toothpick to secure if needed.
