Green Bean Bundles with Bacon and Brown Sugar Glaze

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 3 to 4 minutes until just tender-crisp.
  3. Drain the beans and immediately rinse under cold water or plunge into an ice bath to stop the cooking process.
  4. Gather 6 to 8 green beans for each bundle. Wrap tightly with a half slice of bacon and place seam-side down on the prepared baking sheet.
  5. In a small bowl, whisk together the melted butter, brown sugar, minced garlic, salt, and pepper.
  6. Brush each bacon-wrapped bundle generously with the glaze.
  7. Bake for 20 to 25 minutes, or until the bacon is golden and crisp and the glaze has slightly caramelized.
  8. Carefully transfer the bundles to a serving platter and spoon any remaining glaze from the baking sheet over the top.

Variations :

  • Maple Glaze: Replace the brown sugar with maple syrup for a deeper sweetness.
  • Spicy Kick: Add a pinch of cayenne or a few dashes of hot sauce to the glaze.
  • Herb Finish: Sprinkle with chopped thyme or rosemary just before serving.
  • Cheese Twist: Add a sprinkle of grated Parmesan after baking for a savory finish.
  • Prosciutto Option: Swap bacon with prosciutto for a thinner, crispier variation.

Tips :

  • For the best texture, don’t overcook the green beans during the blanching step—they’ll continue to cook in the oven.
  • Use regular-cut bacon for better wrapping and even crisping.
  • If prepping ahead, assemble the bundles and refrigerate up to one day before baking.
  • Broil the bundles during the last 2 to 3 minutes of baking for an extra crisp top—watch closely to prevent burning.
  • Serve warm with a spoonful of pan glaze for maximum flavor.
