Grilled Cheese Burrito

Instructions:

  1. Cook the beef:
    In a skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess fat. Stir in taco seasoning and water. Simmer for 3–4 minutes, stirring occasionally, until the mixture is thickened.
  2. Prepare the filling:
    Stir the cooked rice and nacho cheese sauce into the seasoned beef mixture. Mix until evenly combined and creamy.
  3. Assemble the burritos:
    Lay a tortilla flat on a clean surface. Spoon the beef and rice mixture into the center. Top with shredded cheddar and mozzarella cheese. Roll up tightly, folding in the sides and rolling from the bottom.
  4. Grill the burritos:
    Heat a skillet over medium heat and melt the butter. Place the burritos seam-side down in the skillet and grill for 2–3 minutes per side, until golden brown and crispy on both sides.
  5. Serve:
    Slice the burritos in half and serve warm with your favorite dips—sour cream, salsa, or guacamole all work beautifully.
