Grilled Thai Coconut Chicken Skewers

Instructions:

  1. In a large bowl or resealable plastic bag, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, red curry paste, turmeric, lime juice, garlic, and ginger until well combined.
  2. Add the chicken pieces, stirring or massaging to coat thoroughly. Cover and refrigerate to marinate for at least 30 minutes, preferably 1–2 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, allowing a little space between each piece for even cooking.
  5. Preheat a grill or grill pan to medium-high heat.
  6. Grill the skewers for 10–12 minutes, turning every few minutes to ensure even charring and thorough cooking. The chicken should be cooked through with nice grill marks.
  7. Transfer to a serving platter and garnish with chopped cilantro. Serve with lime wedges and Thai sweet chili sauce, if desired.

Variations :

  • Vegetarian Option: Substitute chicken with firm tofu or tempeh and adjust grilling time accordingly.
  • Spicy Boost: Add more red curry paste or a chopped Thai chili to the marinade for extra heat.
  • Peanut Twist: Serve with a Thai peanut dipping sauce instead of (or in addition to) sweet chili sauce.
  • Citrus Infusion: Add lemongrass or kaffir lime leaves to the marinade for an even more aromatic flavor profile.
  • Meal Prep Friendly: Marinate and freeze raw chicken pieces in advance for quick grilling later.

Tips :

  • Don’t skip the marinating step—even 30 minutes makes a difference in flavor and tenderness.
  • Use chicken thighs for juicier skewers that resist drying out on the grill.
  • Let the skewers rest for a few minutes after grilling to allow juices to redistribute.
  • Serve over fragrant jasmine rice, or alongside a cool cucumber salad or Thai-style slaw for a well-rounded meal.
  • If using a grill pan, lightly oil it and avoid overcrowding to achieve a good sear.
