Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease a loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic powder, onion powder, salt, and pepper.
  3. In a small bowl, whisk the eggs and milk together. Add to the chicken mixture and mix until well combined.
  4. Gently fold in the shredded mozzarella cheese.
  5. Shape the mixture into a loaf on the baking sheet or press evenly into the prepared loaf pan.
  6. Spread the garlic Alfredo sauce over the top of the meatloaf.

  8. Let rest for 5 minutes before slicing to allow juices to redistribute.
  9. Serve slices topped with extra warm Alfredo sauce and a sprinkle of chopped parsley or red pepper flakes if desired.
