Mexican-Style Casserole

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together shredded chicken, cream of chicken soup, sour cream, taco seasoning, black beans, and corn.
  3. Spread half of the crushed Doritos evenly on the bottom of the baking dish.
  4. Spoon the chicken mixture over the chips, spreading it out evenly.
  5. Sprinkle with half of the cheese. Top with the remaining Doritos, then finish with the rest of the cheese.
  6. Bake uncovered for 25–30 minutes, until hot and bubbly.
  7. Garnish with fresh cilantro and serve warm.

Variations:

  • Protein Swap: Use cooked ground beef or turkey instead of chicken.
  • Veggie Add-In: Stir in diced bell peppers, jalapeños, or zucchini.
  • Cheese Twist: Try a mix of cheddar and queso fresco for extra richness.
  • Spicy Upgrade: Add hot sauce or use spicy Doritos for a kick.

Tips:

  • Slightly crush the Doritos—you want big crunchy pieces, not crumbs.
  • Assemble ahead of time and refrigerate; just bake when ready to serve.
  • For a creamier texture, stir in a handful of extra cheese into the chicken mixture.
  • Serve with toppings like salsa, guacamole, sour cream, or chipotle ranch to complete the dish.
