Mexican White Trash Casserole

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain any excess fat.
  3. Stir in taco seasoning, diced tomatoes with green chilies, and black beans. Let simmer for 5 minutes.
  4. In a separate bowl, mix cream of chicken soup with sour cream until smooth.
  5. Layer half of the Doritos in the prepared baking dish, followed by half the beef mixture, half the creamy sauce, and half the cheese.
  6. Repeat the layers with the remaining Doritos, beef, creamy sauce, and cheese.
  7. Bake uncovered for 25–30 minutes, until bubbly and golden on top.
  8. Garnish with green onions and diced tomatoes before serving.
