Instructions:
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- Blend the cottage cheese until completely smooth and creamy.
- In a large bowl, whisk together the blended cottage cheese, eggs, applesauce, and vanilla extract.
- In a separate bowl, combine the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the grated carrots and optional nuts or raisins.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30 to 35 minutes, or until the center is set and a toothpick comes out mostly clean.
- Allow the bars to cool completely before adding the topping.
- Blend the topping ingredients until smooth, then spread evenly over the cooled bars.
- Chill for at least 30 minutes before slicing and serving.
