One Pot Kielbasa Pasta

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Cook the kielbasa rounds until browned on both sides. Remove and set aside.
  2. In the same skillet, sauté onion and garlic until softened and fragrant.
  3. Stir in chicken broth, diced tomatoes, heavy cream, pasta, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  5. Stir in cheddar cheese until the sauce becomes creamy and smooth. Return the kielbasa to the skillet and mix everything together.
  6. Garnish with chopped parsley and serve hot.

Variations:

  • Veggie Boost: Add spinach, zucchini, or bell peppers in the last 5 minutes of cooking.
  • Cheese Swap: Try Monterey Jack or a smoked cheese for a different twist.
  • Spicy Kick: Use hot smoked sausage or add red pepper flakes to the sauce.
  • Lightened Up: Swap heavy cream for half-and-half or evaporated milk.

Tips:

  • Stir occasionally while simmering to prevent the pasta from sticking.
  • Reserve a little extra broth if you like your pasta saucier.
  • Use freshly grated cheddar for the smoothest melt and richest flavor.
  • Leftovers reheat well—add a splash of broth or milk to loosen the sauce.
