One-Pot Smoked Sausage Pasta

Instructions:

  1. Brown the Sausage
In a large pot or deep skillet, heat olive oil over medium heat. Add smoked sausage and cook for 3–4 minutes until browned. Remove and set aside.
  2. Sauté Aromatics
In the same pot, add diced onion and cook for 2 minutes until softened. Add garlic and sauté for 30 seconds until fragrant.
  3. Cook the Pasta
Stir in pasta, diced tomatoes with juice, chicken broth, and heavy cream. Bring the mixture to a boil, then reduce to a simmer.
  4. Simmer Until Tender
Cook uncovered, stirring occasionally, for 12–14 minutes or until the pasta is tender and the sauce has thickened.
  5. Add Cheese and Sausage
Return the sausage to the pot. Stir in cheddar cheese, Parmesan, and paprika. Mix well until the cheese is melted and the sauce is creamy.
  6. Season and Serve
Taste and adjust with salt and black pepper as needed. Remove from heat.
  7. Garnish
Sprinkle with chopped fresh parsley before serving.

Variations:

  • Swap bowtie pasta for penne, rotini, or rigatoni.
  • Add a handful of spinach or kale during the last few minutes for a green boost.
  • Use mozzarella or pepper jack cheese for a different flavor profile.

Tips:

  • For a spicier kick, use hot smoked sausage and add red pepper flakes to taste.
  • Stir frequently while simmering to prevent the pasta from sticking to the pot.
  • Let the pasta rest for a few minutes after cooking—it helps the sauce cling beautifully.
