Oven Roasted Smoked Sausage and Potatoes

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the potatoes, sliced sausage, and onion. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Toss well to coat evenly.
  3. Spread the mixture out in a single layer on a large baking sheet, avoiding overcrowding for better browning.
  4. Roast for 30–35 minutes, stirring halfway through, until the potatoes are golden and fork-tender and the sausage is browned and crisp at the edges.
  5. Garnish with chopped parsley if desired and serve hot.
