Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the potatoes, sliced sausage, and onion. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Toss well to coat evenly.
- Spread the mixture out in a single layer on a large baking sheet, avoiding overcrowding for better browning.
- Roast for 30–35 minutes, stirring halfway through, until the potatoes are golden and fork-tender and the sausage is browned and crisp at the edges.
- Garnish with chopped parsley if desired and serve hot.
