Instructions:
- Prepare a boiling water bath canner and keep 8 pint jars hot until ready to fill.
- Wash the okra thoroughly and trim the stems carefully without cutting into the pods, which helps prevent a slimy texture.
- In a large saucepan, combine the white vinegar, water, and pickling salt. Bring the brine to a full boil, stirring until the salt dissolves.
- Place 1 garlic clove, 1 teaspoon dill seed (or 1 fresh dill head), and 1 dried chili pepper, if using, into each prepared hot jar.
- Pack the okra tightly into the jars with the stem ends facing upward, leaving ½-inch headspace.
- Carefully pour the hot brine over the okra, maintaining the recommended ½-inch headspace.
- Remove any trapped air bubbles using a non-metallic utensil. Adjust the headspace if necessary, then wipe the jar rims clean.
- Apply the lids and screw bands until fingertip tight.
- Process the jars in a boiling water bath:
- Pint jars: 10 minutes
- Quart jars: 15 minutes
- Adjust processing times according to your altitude if necessary.
- Carefully remove the jars and allow them to cool undisturbed for 12 to 24 hours. Verify that each lid has sealed properly before storing in a cool, dark place.
Variations
- Add whole black peppercorns for a mild peppery flavor.
- Include a teaspoon of mustard seed in each jar for extra depth.
- Use fresh dill heads when available for a brighter herbal flavor.
- Increase the number of dried chili peppers for a spicier pickle.
- Add a small pinch of coriander seed or celery seed to create a unique pickling blend.
Tips
- Select small, tender okra pods no longer than 4 inches for the crispiest finished pickles.
- Avoid cutting into the pods when trimming the stems to help reduce sliminess.
- Use only 5% acidity white vinegar for safe home canning.
- Pack the pods tightly to minimize floating after processing.
- Let the jars rest for at least 2 weeks before opening so the flavors have time to fully develop.
- Label each jar with the canning date and store in a cool, dark pantry for the best quality.
- Once opened, refrigerate the pickled okra and enjoy it within 1 month.
- Serve with charcuterie boards, Bloody Marys, sandwiches, salads, burgers, or as a flavorful snack straight from the jar.
