Instructions:
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp, season with Cajun seasoning, and cook 2–3 minutes per side until pink and slightly charred. Remove and set aside.
- In the same skillet, add sausage (or ground beef) and cook until browned, breaking it into crumbles. Remove and set aside with the shrimp.
- Add the remaining olive oil, onion, celery, bell peppers, and garlic to the skillet. Cook 4–5 minutes until softened.
- Stir in uncooked rice, paprika, thyme, salt, and pepper. Toast rice for 2 minutes, stirring often.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender.
- Return cooked sausage and shrimp to the skillet. Toss gently to combine and heat through.
- Garnish with chopped parsley or chives before serving.

- Swap shrimp for chicken or andouille sausage for a more traditional dirty rice.
- Add diced tomatoes or tomato paste for a slightly tangy flavor.
- Stir in spinach or kale at the end for an extra veggie boost.
