Shrimp Dirty Rice Skillet

Instructions:

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp, season with Cajun seasoning, and cook 2–3 minutes per side until pink and slightly charred. Remove and set aside.
  2. In the same skillet, add sausage (or ground beef) and cook until browned, breaking it into crumbles. Remove and set aside with the shrimp.
  3. Add the remaining olive oil, onion, celery, bell peppers, and garlic to the skillet. Cook 4–5 minutes until softened.
  4. Stir in uncooked rice, paprika, thyme, salt, and pepper. Toast rice for 2 minutes, stirring often.
  5. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender.
  6. Return cooked sausage and shrimp to the skillet. Toss gently to combine and heat through.
  7. Garnish with chopped parsley or chives before serving.

Variations :

  • Swap shrimp for chicken or andouille sausage for a more traditional dirty rice.
  • Add diced tomatoes or tomato paste for a slightly tangy flavor.
  • Stir in spinach or kale at the end for an extra veggie boost.
