Southwest Chorizo Grilled Cheese

Instructions:

  1. In a skillet over medium heat, scramble the eggs until just set. Remove from heat and set aside.
  2. On two slices of bread, layer half of the cheddar cheese, scrambled eggs, crumbled chorizo, roasted peppers, and Monterey Jack cheese.
  3. Top with the remaining slices of bread to close the sandwiches.
  4. Butter the outsides of each sandwich. Place in a skillet over medium heat and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
  5. Slice and serve immediately with your favorite garnish or dipping sauce.
