Steak-Loaded Potato Bites

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the potato rounds with olive oil, garlic powder, paprika, salt, and black pepper. Arrange in a single layer on the baking sheet and bake for 20 minutes, flipping halfway through.
  3. While the potatoes bake, season the steak cubes with salt and pepper. Heat butter in a skillet over medium-high heat and sear steak for 2–3 minutes until browned but still tender. Set aside.
  4. Remove potatoes from the oven and sprinkle each round with shredded cheddar cheese. Top with a cube of steak.
  5. Return to the oven for 5 minutes, or until the cheese melts.
  6. Serve warm, topped with a dollop of sour cream and a sprinkle of green onions.

Variations:

  • Bacon Lover’s Version: Add crispy bacon crumbles on top.
  • Spicy Kick: Sprinkle with diced jalapeños or drizzle with hot sauce.
  • Cheese Swap: Try pepper jack or smoked gouda for a different flavor profile.
  • Saucy Twist: Drizzle with ranch, blue cheese dressing, or BBQ sauce before serving.

Tips:

  • Choose evenly sized potatoes for uniform bites.
  • Don’t overcook the steak in the skillet; it will finish slightly in the oven.
  • For extra crispy potatoes, broil for 2–3 minutes before adding cheese and steak.
  • Serve immediately for the best flavor and texture.
