Strawberry Crunch Cheesecake Bites

Instructions:

  1. Prepare the filling:
In a medium bowl, beat softened cream cheese until smooth and fluffy. Add powdered sugar and vanilla extract, and mix well. Stir in crushed graham crackers and melted white chocolate (if using). Chill the mixture for 20–30 minutes until firm.
  2. Shape the bites:
Using a tablespoon or small cookie scoop, portion out the chilled mixture and roll into balls. Place them on a parchment-lined tray and freeze for 15 minutes to firm up.
  3. Make the crunch coating:
In a bowl, combine crushed Golden Oreos with strawberry Jell-O powder and melted butter. Stir until evenly mixed and crumbly.
  4. Coat the bites:
Roll each chilled cheesecake bite in the strawberry crunch coating, pressing gently to help the mixture adhere well.
  5. Chill and serve:
Return the coated bites to the refrigerator for at least 15 minutes to set. Serve cold.

Variations:

  • Use freeze-dried strawberries blended into powder for a natural, fruity coating.
  • Swap Golden Oreos for vanilla wafers or shortbread for a different base flavor.
  • Roll in melted white chocolate before the crunch topping for a candy shell effect.

Tips:

  • For a vibrant hue, mix in a drop of pink food coloring with the strawberry coating.
  • These store beautifully in an airtight container in the refrigerator for up to 5 days.
  • Want to make them ahead? Freeze the uncoated bites and roll in crunch before serving.
