Strawberry Mousse Pie

Instructions:

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Place in the refrigerator to chill while preparing the mousse.
  3. In a medium saucepan, combine the chopped strawberries, sugar, water, and lemon juice. Cook over medium heat for 5–7 minutes, until strawberries soften and begin to break down.
  4. Transfer the mixture to a blender or food processor and puree until smooth. Set aside to cool slightly.
  5. In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for 5 minutes to bloom. Then gently heat (microwave for about 10–15 seconds or use a small saucepan) just until the gelatin is dissolved.
  6. Stir the dissolved gelatin into the slightly cooled strawberry puree. Let the mixture come to room temperature.
  7. In a large chilled bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the cooled strawberry mixture into the whipped cream using a spatula, taking care not to deflate the cream.
  9. Spoon the mousse into the prepared crust and smooth the top with an offset spatula.
  10. Refrigerate for at least 4 hours, or until fully set.
  11. Before serving, garnish with fresh sliced strawberries and whipped cream if desired.
