Tex-Mex Mashed Potato Casserole

Instructions:

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large pot, boil the cubed potatoes in salted water until fork-tender, about 15–20 minutes. Drain thoroughly.
  3. Mash the potatoes with butter, sour cream, milk, garlic powder, salt, and pepper until smooth and creamy. Spread evenly into the bottom of the prepared baking dish.
  4. In a mixing bowl, combine ground beef with egg, breadcrumbs, chili powder, cumin, onion powder, salt, and pepper. Mix until just combined and form into small meatballs (about 1 to 1½ inches in diameter).
  5. In a skillet over medium heat, brown the meatballs on all sides for about 6–8 minutes, until mostly cooked through.
  6. Arrange the browned meatballs on top of the mashed potatoes. Evenly distribute corn and black beans over the meatballs.
  7. Sprinkle shredded pepper jack cheese generously over the top.
  8. Bake uncovered for 15–18 minutes, or until cheese is melted and bubbling and meatballs are fully cooked.
  9. Let the casserole rest for 5 minutes before serving. Garnish with chopped cilantro, if using.
