Instructions:
- Prepare a boiling water bath canner and keep 6 half-pint jars hot until ready to fill.
- Wash and sort the blackberries, removing any stems or damaged berries.
- Combine the blackberries and water in a large saucepan. Bring to a gentle boil, then simmer for about 10 minutes, stirring occasionally.
- Pour the cooked berries through a damp jelly bag or fine-mesh strainer. Allow the juice to drip naturally without pressing to produce the clearest syrup.
- Measure 5 cups of blackberry juice into a clean saucepan.
- Stir in the granulated sugar and bottled lemon juice.
- Bring the mixture to a full rolling boil, stirring until the sugar has completely dissolved. Boil for 1 minute.
- Remove the syrup from the heat and skim off any foam, if desired.
- Ladle the hot syrup into the prepared hot jars, leaving 1/4-inch headspace.
- Remove any air bubbles if necessary and wipe the jar rims clean.
- Apply the lids and bands until fingertip tight.
- Process the jars in a boiling water bath:
- Half-pint jars: 10 minutes
- Pint jars: 10 minutes
- Adjust the processing time for your altitude if necessary.
- Carefully remove the jars and allow them to cool undisturbed for 12–24 hours. Check that each lid has sealed before storing.
Variations
- Add a cinnamon stick while heating the juice for a warm, spiced flavor.
- Stir in a teaspoon of vanilla extract after removing the syrup from the heat for extra richness.
- Add a few sprigs of fresh thyme or rosemary during cooking, then remove before canning for a subtle herbal note.
- Replace a portion of the blackberries with raspberries for a mixed berry syrup.
- Add the finely grated zest of one lemon for a bright citrus twist.

- Use fully ripe blackberries for the sweetest flavor and deepest color.
- Let the juice drip naturally through the jelly bag or strainer without pressing to keep the syrup beautifully clear.
- Stir until the sugar is completely dissolved before bringing the mixture to a full boil.
- Always use bottled lemon juice to provide consistent acidity for safe home canning.
