Instructions:
- Prepare your pressure canner according to the manufacturer’s instructions and keep clean jars hot until ready to fill.
- Wash the green beans thoroughly, trim the stem ends, and remove any strings if necessary.
- Cut the beans into 1- to 2-inch pieces, or leave smaller beans whole if preferred.
- Bring a large pot of water to a full rolling boil.
- Pack the raw green beans tightly into the prepared hot jars.
- If desired, add canning or pickling salt—½ teaspoon for pint jars or 1 teaspoon for quart jars. The salt is optional and used for flavor only.
- Carefully pour the boiling water over the beans, leaving 1 inch of headspace.
- Remove any trapped air bubbles with a non-metallic utensil and adjust the headspace if needed.
- Wipe the jar rims clean, apply the lids and screw bands until fingertip tight.
- Place the jars into the pressure canner and process according to the manufacturer’s directions:
- Pint jars: 20 minutes
- Quart jars: 25 minutes
- Use the correct pressure for your altitude and whether you are using a weighted-gauge or dial-gauge pressure canner, following current tested recommendations.
- When processing is complete, allow the pressure canner to cool and depressurize naturally. Carefully remove the jars and let them cool undisturbed for 12 to 24 hours. Verify that each lid has sealed properly before storing.

- Add fresh herbs, garlic, bacon, onions, or seasonings after opening the jars to create a variety of flavorful side dishes.
- Heat the beans with butter and cracked black pepper for a simple, classic accompaniment.
- Toss the drained beans with olive oil, toasted almonds, and lemon zest for an easy vegetable side.
- Add the canned beans directly to soups, stews, casseroles, and pot pies for quick meal preparation.

- Harvest or purchase fresh, crisp green beans for the best texture and flavor.
- Trim and can the beans as soon as possible after picking to preserve quality.
- Pack the beans firmly without crushing them to maximize jar capacity.
- Maintain the recommended 1-inch headspace to help ensure a proper seal during processing.
- Always allow the pressure canner to depressurize naturally before opening the lid to prevent liquid loss from the jars.
- Label each jar with the canning date and store in a cool, dark pantry for the best quality.
- Once opened, refrigerate any unused beans and use them within 3 to 4 days.
