Instructions:
- Prepare a boiling water bath canner and keep clean pint jars hot until ready to fill.
- Wear disposable gloves while handling the jalapeños. Wash the peppers thoroughly and remove the stems.
- Leave small peppers whole and cut 2 to 4 small slits in each one to allow the brine to penetrate. If using larger peppers, slice them into rings or quarter them.
- In a large saucepan, combine the white distilled vinegar, water, canning salt, granulated sugar, and garlic cloves. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- Remove and discard the garlic cloves.
- Pack the prepared jalapeños tightly into the hot jars, leaving ½-inch headspace.
- Ladle the hot pickling brine over the peppers, maintaining ½-inch headspace.
- Remove any trapped air bubbles using a non-metallic utensil. Adjust the headspace if necessary, then wipe the jar rims clean.
- Apply the lids and screw bands until fingertip tight.
- Process the jars in a boiling water bath:
- Pint jars: 10 minutes
- Half-pint jars: 10 minutes
- Adjust processing times according to your altitude if necessary.
- Carefully remove the jars and allow them to cool undisturbed for 12 to 24 hours. Verify that each lid has sealed properly before storing in a cool, dark place.
Variations
- Add a few whole black peppercorns to each jar for extra depth of flavor.
- Include a pinch of dried oregano for a subtle Mexican-inspired twist.
- Add a few slices of carrot or onion to each jar for additional color and flavor, following a tested recipe if canning.
- Mix green and red jalapeños for a colorful presentation.
- For a sweeter finish, increase the sugar slightly when preparing refrigerator pickles only. Maintain tested proportions for shelf-stable canned recipes.

- Choose firm, unblemished jalapeños for the best texture and flavor.
- Always wear gloves when handling hot peppers, and avoid touching your face or eyes.
- Leave the recommended ½-inch headspace to help ensure a proper seal during processing.
- Use vinegar with 5% acidity for safe home canning.
- Allow the jars to rest for at least 2 to 3 weeks before opening so the peppers fully absorb the tangy brine.
- Label each jar with the canning date and store in a cool, dark pantry for the best quality.
- Once opened, refrigerate the pickled jalapeños and use them within 1 month.
