Instructions:
- Prepare a boiling water bath canner and keep 6 half-pint jars hot until ready to fill.
- Place the chopped tomatoes and onions into a large stainless steel pot.
- Stir in the sugar, apple cider vinegar, bottled lemon juice, salt, smoked paprika, cumin, black pepper, and red pepper flakes, if using.
- Bring the mixture to a boil over medium-high heat, stirring frequently until the sugar completely dissolves.
- Reduce the heat and simmer uncovered for 1 to 1½ hours, stirring often, until the mixture thickens to a jam-like consistency.
- Stir more frequently as the jam thickens to prevent scorching or sticking.
- Ladle the hot tomato jam into the prepared hot jars, leaving 1/4-inch headspace.
- Remove any air bubbles, adjust the headspace if necessary, and wipe the jar rims clean.
- Apply the lids and screw bands until fingertip tight.
- Process the jars in a boiling water bath:
- Half-pint jars: 10 minutes
- Pint jars: 10 minutes
- Adjust processing time as needed for your altitude.
- Carefully remove the jars and allow them to cool undisturbed for 12–24 hours. Check that each lid has sealed before storing.
Variations
- Add a teaspoon of fresh grated ginger for a subtle spicy warmth.
- Stir in a tablespoon of balsamic vinegar for extra depth and richness.
- Increase the red pepper flakes for a sweeter, spicier jam.
- Add a sprig of fresh rosemary or thyme while simmering, then remove before canning.
- Replace the smoked paprika with chipotle powder for a smoky, spicy variation.
Tips
- Use fully ripe, flavorful tomatoes for the richest taste and best texture.
- Stir frequently during the final stages of cooking to prevent the jam from sticking to the bottom of the pot.
- For a smoother spread, use an immersion blender before filling the jars.
- Always use bottled lemon juice and vinegar with 5% acidity to ensure safe home canning.
- Enjoy tomato jam with sharp cheddar, goat cheese, cream cheese, burgers, grilled chicken, meatloaf, breakfast sandwiches, or as part of a charcuterie board. It also makes a beautiful homemade gift when packaged in decorative jars.
